Consider the size of your pots and pans that you regularly use. Also, very deep bowls go way below the countertop, this requires you to bend while using the sink. So, choose the depth that is comfortable to work in, and is not too deep from the countertop surface.
Take the sink down, drill holes for the brass inserts. Clean the inner rim of the hole with an alcohol-base solution, applying a silicone sealant carefully around the edges, before re-attaching the sink into it.
